I have to be honest with you and tell you I don't feel like blogging today. I don't feel like thinking about anything funny to write. Recipe: blt stuffed avocado
Avocados have been one of the staples in my diet since I graduated college. When my husband and I lived in Portland, Oregon I would eat at least one avocado a day. Unfortunately, after our move to South Korea I was shocked to find out that avocados cost three dollars each here. I still buy them...just sparingly. Today I am sharing one of my favorite recipes for a BLT stuffed avocado. Don't worry it's got all the goods, and is even 'husband approved' as enough to get him full. Plus, there are always leftovers for sandwiches the next day. This recipe feeds two. Using the shadows
It's official. I have way too much time by myself. My husband works hard every single day, and I am so lucky to be able to spend more time at home than last year. The couple friends I have here in Korea unfortunately work a lot as well. I'm left with entertaining myself for hours each week...thus the creation and journey of my blog. I also love photography (duh). Since I have a huge absence of photo subjects, I'm forced obligated to not only stage myself behind the lens, but also in front of it with self portrait photography. Here's the deal folks. I actually completely spaced on the day. How the heck is it Friday already (not that I'm complaining)? That being said, I don't have anything super funny to share with you. Besides this picture below. I was going to post it as a Weird Wednesday post this last Wednesday, but I forgot it was Wednesday too. Shoot. My entire week has been messed up. First of all you should notice that this is a 'self' gas station-that means self serve. It's the only self service gas station I've seen in Korea. Having someone pump my fuel is pretty familiar to me after living in Oregon (it's illegal to pump your own gas). Camping with the locals (expat level: expert)
I hate to say it, but I was not looking forward to this one. I spent the entire week before our 'camping trip' dragging my feet and complaining how I didn't even know the family we were going with. I emphasized the words camping trip, because after being here a year and a half I've realized Korean camping and American camping are two different things. For example, many Koreans take a tent to the beach during the day and set it up, bbq grill and all, for a few hours in the sand and consider it camping. Anyway, back to my story. I was out camping last weekend, and didn't get a chance to make my Lately post. 1///// I was in desperate need of summer clothing, and Amber agreed to go with me to Busan. We tore it up shopping at H&M, and had fun walking around Shinsegae (largest department store in the world).
